As a rather young cheese (6 to 9 months aged), Gruyère AOP draws attention with its soft and refined taste, which will delight palates in search of sweet pleasures. As it ages over 10 months, Gruyere gets a more intense flavor. Full-bodied and fruity, it has a firm and slightly crumbly texture. Le Gruyère AOP deserves a place on any cheeseboard. It can be enjoyed as a dessert or as a snack on crusty bread; or it can be used to make delicious warm dishes. And: Le Gruyère AOP also belongs in proper fondue.
